Puliyodharai | Tamarind rice

Tamarind rice or puliyodharai or puliogare is a very traditional and most popular south Indian rice variety made with tamarind paste.

Ingredients

Cooked rice-1 cup

For Pulikaichal-

Tamarind extract-1 cup
Mustard seeds-1/2 tsp
Urad dal-1 tsp
Bengal gram dhal-1 tsp
Red chillies-8
Curry leaves few
Turmeric powder-1/4 tsp
Salt to taste
Gingelly oil-2 -3 tbsps
Peanuts -2 tbsps

For masala powder(dry roast and powder)

Bengal gram dhal-1 Tbsp
Coriander seeds-1 Tbsp
Red chillies-5-6 nos
Peppercorns-1/4 tsp
Ellu(til)-1 tsp
Fenugreek seeds-1/4 tsp
Asafoetida-1/4 Tsp 

Method

👉Dry roast the ingredients given under for masala and grind to a fine powder.set aside.

               

👉Heat gingelly oil in a kadai add mustard seeds, urad dal, bengal gram dhal, peanuts, curry leaves, red chillies, and saute until the dhals are golden brown colour.
👉Now add the tamarind extract, turmeric powder, salt and little water and cook until raw smell goes and the oil oozes on top. The pulikaichal is ready.


  👉Add the required amount of pulikaichal to the cooked rice in batches according to your taste preference.
👉Finally, add the masala powder to the rice and mix everything well gently.


👉Garnish with roasted peanuts and serve.

Note -

✍️You can add masala powder to the pulikaichal while cooking itself or add later.
✍️You can store the excess pulikaichal in refrigerator for a month.
