Vendakkai Podi Kari | Ladies Finger masala
Vendakkai podi kari is a yummy way to eat vendakkai ( ladies finger). It is cooked with a specially made podi (masala powder) and stir-fried. It is a traditional South Indian recipe especially famous in certain communities in Tamil nadu. Ingredients
Ladies finger(Vendakkai)-1/2 kg chopped to 1-inch piece
Turmeric powder-1/2 tsp
Tamarind extract-1-2 tsp
Jaggery -1/2 tsp
Mustard seeds-1/2 tsp
Curry leaves few
Oil-2 tsps
Salt to taste
Masala powder (Podi)- (Roast the ingredients in 1/2 tsp oil and powder coarsely)
Urud dhal-1 tbsp
Bengal gram dhal-1 tbsp
Coriander seeds-1 tbsp
Cumin seeds-1 tsp
Fenugreek seeds-1/2 tsp
Red chillies-6 nos
Asafetida-a pinch
Method
👉Add chopped vendakkai ( ladies finger).Saute for a 2-3 mins add turmeric powder, tamarind extract, and jaggery and mix well sprinkle a little water cover the kadai keep stirring occasionally, and cook for 5 mins or until the ladies finger is 3/4 th done.Don't over cook the ladies finger.
👉Once the ladies finger is cooked add required salt and finally add the masala powder (podi) mix everything well. Add oil if it is too dry. Roast for 2 mins.
👉Garnish and serve hot.

✍️Do not add all the masala powder at once.
✍️Using the same masala you can try with other veggies like potato, raw plantain, brinjal etc.

Note -
✍️Do not add excess water while cooking ladies finger just sprinkle water and allow it to cook in steam.It should be cooked only 3/4 th.✍️Do not add all the masala powder at once.
✍️Using the same masala you can try with other veggies like potato, raw plantain, brinjal etc.
