Potato Bhaji Recipe/ Aloo Bhaji for puri

Potato bhaji masala is a delicious and traditional side dish for poori and chapati. Traditionally for this recipe the potatoes are boiled separately and then sauteed along with onion, ginger, garlic, green chillies and tempering. But here I have cooked the potato masala in pressure cooker,this makes the cooking easier and quicker and trust me it elevates the flavour even more. Ingredients

Potato -5-6 nos (skin removed, chopped to cubes & soaked in water until use)

Onion-2 nos cut lengthwise

Green chillies-3 nos slit lengthwise

Garlic-6 nos chopped

Ginger -1 Tbsp chopped fine

Turmeric powder-1/2 tsp

Mustard seeds-1/2 tsp 

Urad dal-1 Tbsp 

Bengal gram dal-1 Tbsp 

Curry leaves and coriander leaves few 

Salt to taste

Oil -1-2 Tbsps

Method

👉Heat oil in a pressure cooker add mustard seeds,urad dal, Bengal gram dal, green chillies, ginger, garlic and curry leaves and allow it to splutter.



👉Add onions and saute for a minute




👉Add chopped potatoes, turmeric powder, salt and 1 & 1/2 cups of water and mix everything well.







👉Pressure cook for 3 whistles and switch off the gas and allow the pressure to subside completely.



👉Open the cooker and again switch on the gas.



👉Mash the potatoes well.




👉Allow the gravy to boil for 5 minutes or until you get the desired consistency.



👉Garnish with coriander leaves and serve hot with pooris or chapati.
