Peerkangai Kadayal
A delicious healthy and traditional Tamil Nadu style side dish made with Peerkangai (Ridge gourd) , shallots and mildly spiced with green chillies .This Peerkangai Kadayal is a perfect combination for idli, dosa, chapati and even rice.I have made this as a one pot recipe in pressure cooker. Ingredients
Peerkangai-250 gms chopped
Shallots-15 nos
Tomato-1-2 nos chopped
Garlic-4 nos
Green chillies-3-4 nos slit length wise
Tamarind extract-1/8-1/4 cup
Salt to taste
Turmeric powder-1/4 tsp
Mustard seeds-1/2 tsp
Cumin seeds-1 tsp
Red chillies-1-2 nos
Asafoetida-1/4 Tsp
Curry leaves and coriander leaves few
Oil -2 Tsps

Method
👉Heat oil in a pressure cooker add mustard seeds, cumin seeds, red chillies, green chilies,curry leaves and allow it to splutter .Next add shallots and garlic sauté for a 2 minutes.
👉Add tomatoes and Peerkangai(ridge gourd) and sauté for a minute.
👉Add salt, turmeric powder, asafoetida and 3/4 cup of water just enough to cover the veggies and pressure cook for 3 whistles and switch off the gas allow pressure to subside completely.
👉Open the cooker and again switch on the gas then mash the Peerkangai well.
👉Add tamarind extract and allow the gravy to boil until desired consistency.
👉Garnish with chopped coriander leaves and switch off the gas .
👉Serve hot.
