For Masala Powder
Pepper-2 tsps
Cumin-1 tsp
Fenugreek -1/2 tsp
Coriander -2 tsps
Ajwain -1/2 tsp
Dried Ginger-1 piece
Red chillies-6-8 nos
Curry leaves-handful
Other ingredients-
Tamarind extract-1 cup
Garlic-12-15 nos
Small onion-10-12 nos
Tomato-1-2 nos
Turmeric powder-1/2 tsp
Salt to taste
Mustard seeds-1/2 tsp
Fenugreek-1/4 tsp
Curry leave-few
Gingelly oil -2 tbsps
Marundhu Kuzhambu Recipe Video
Method
👉Dry roast the ingredients given under for Masala to golden brown colour and cool and powder finely set aside.
👉Heat gingelly oil in a kadai add mustard seeds, fenugreek seeds, curry leaves allow it to splutter.Add garlic sauté well
👉Add small onions sauté well
👉Add tomato sauté until mushy .
👉Add turmeric powder, powdered masala as required and salt mix well and sauté for few seconds in medium heat.
👉Add tamarind extract , required water and mix well.
👉Allow the Kuzhambu to boil for 5-7 mins until it thickens and oil oozes on top.
👉Switch off the gas .
👉Serve hot with steamed rice with drizzles of ghee or gingelly oil enjoy.☺️
