Ingredients
For Masala
Raw rice-1 -1/2 tbsps
Fenugreek-1/8 tsp
Red chillies -6-8 nos
Grated coconut -1/2 cup
Coconut oil -1 tsp
Other ingredients -
Drumsticks -1 no
Brinjal -2-3 nos
Potato -1 no
Thin tamarind extract -1/2 cup
Buttermilk-1 cup
Salt to taste
Mustard seeds-1/2 tsp
Curry leaves -few
Coconut oil-1 tsp

Method
👉In a pressure cooker add drumsticks, brinjal, potatoes and required water just enough to cover the veggies and pressure cook for 2 whistles switch off the gas and allow the pressure to release naturally.
👉Now open the cooker and set the vegetables along with the water aside.
👉Heat a tsp of coconut oil in a pan add raw, rice, fenugreek and red chillies and sauté well. next, add grated coconut and sauté until a light golden brown colour. Transfer to mixie jar, cool and grind to fine paste adding a little water. Set aside.
👉Heat coconut oil in a kadai add mustard seeds, and curry leaves and allow it to splutter.
👉Add tamarind extract and boil for a minute.
👉Next add the ground masala paste and sauté for 2 minutes in medium flame.
👉Add the reserved water from the cooked vegetables.
👉Add a cup of water ,required salt mix well and allow the Kuzhambu to boil for 5-7 minutes until it thickens .
👉Add the cooked vegetables mix well and allow to boil for another 2-4 minutes .
👉Once the raw smell goes and Kulambu thickens, add the buttermilk mix well, cook for 2 minutes, and switch off the gas.
👉Serve hot.
