Gothumai Rava Payasam, or Wheat Rava Kheer, is a nutritious twist on traditional payasam. Ingredients-

Broken wheat rava -1 cup
Jaggery -3/4 cup ( add according to taste)
Milk -500 -600 ml
Cardamom powder -1/4 tsp
Cashews few
Salt a pinch
Saffron strings few
Ghee -2 tbsps

Method

👉In a pressure cooker heat 1 tsp ghee and roast the cashews until light golden brown colour remove it set aside.


👉In the same ghee roast the wheat rava for few seconds then add 3 cups water, a pinch of salt and pressure cook for 2 whistles set aside.

👉Meanwhile, dissolve jaggery in 1/2 cup water and heat it for 2 minutes, remove from fire, strain it and keep the syrup ready.

👉In a kadai heat rest of the ghee, add jaggery syrup, cooked wheat rava mix well, then add cardamom powder, saffron strings.

👉Finally, add milk and bring everything to a boil until the mixture thickens to payasam consistency.

👉Add roasted cashews mix well. Remove from the fire in slight watery consistency as the payasam will thicken after some time, add milk if needed.

👉Serve.

Note

✍️You can replace milk with coconut milk for more creamy nutty flavour.
