Ingredients

Ragi flour -2 cups
Urad dal -1/2 cup
Salt to taste

Method 

1.Wash and soak the urad dal for 2 hours and grind to smooth frothy batter.

2.In a mixing bowl or vessel add the ragi flour,urad dal batter ,salt and mix well.Close with lid and allow it to ferment overnight.

3.Grease the idli plates with gingelly oil and pour laddle full of batter on to the moulds.



4. Steam cook for 10 mins.


5.Gently remove the ragi idli from the moulds and serve hot with tomato chutney/ coconut chutney.


Preparation Time -12 hrs for fermentation
15-20 mins for cooking

Ingredients

Milk -1 litre
Condensed milk-200 ml
Cardamom powder-1/2 tsp
Saffron soaked in warm milk - few strings
Dry fruits and nuts ( badam,pista,cashew,dates,grapes,figs)chopped -1/4 cup or as required

For Paste

Badam-10 nos( soaked in warm water for 15 mins and skin removed )
Cashews-10 nos
Pista -10 nos
Poppy seeds(khus khus)-1 tsp soaked in warm water

Method

 1.Grind the ingredients given for paste to a coarse paste adding little water.set aside.

2.In a heavy bottom vessel or kadai add milk and bring it boil.

3.Continue to boil the milk until it reduces to half it's quantity.
4 .Add cardamom powder and saffron.

5.Add paste mix well.

 6.Continue to boil for another 2-4 mins.
7.Add condensed milk mix well .

8.Add chopped dry fruits and nuts mix well and boil for another 2 mins.

9.Remove from fire once you get desired consistency.

10.Serve hot or chilled.


Note-
Instead of making paste of the nuts you can dry roast them and powder it coarsely.
Adjust the amount of condensed milk and quantity of dry fruits and nuts according to your taste preferences.

Ingredients

Chana(chickpeas)-1 cup washed and soaked overnight
Turmeric powder -1/4 tsp
Homemade sundal powder -2 tsps
Grated coconut -1 -2 tbsps
Curry leaves few
Mustard seeds -1/2 tsp
Urad dal -1 tsp
Ginger -1 tsp finely chopped
Red chillies -2 nos broken
Asafetida a pinch
Salt to taste
Oil -2 tsps

Method

1.Wash and soak the chana overnight.Drain the water completely and add fresh water,turmeric powder ,salt and pressure cook for 3 whistles.Drain the water and set the cooked chana aside.

2.Meanwhile heat oil in a kadai add mustard seeds, urad dal,red chillies,curry leaves, ginger and saute well.

3.Add the cooked chana mix everything well.Add salt if needed.

4.Add the sundal podi mix well.

5.Finally add grated coconut mix gently.

6.Remove from fire,serve hot.





Preparation time- 20 mins
Serves -4

Wheat appam, also known as gothumai appam, is a delectable and simple instant appam variation. Traditionally, appam is made solely with raw rice. However, in this recipe, I have substituted with whole wheat flour. Additionally, instead of cooking the appams directly in oil which is a time consuming process as we can fry only one appam at a time, I have opted to use a Paniyaram kadai. You can choose whichever method you prefer. Appam is a beloved prasadham (offering) for Lord Ganesha and Krishna so making this wheat appam a perfect choice for the upcoming Vinayagar Chaturthi or Krishna Janmashtami festival.

Ingredients

Wheat flour -1 cup
Rice flour -1/4 cup
Jaggery syrup -1/2 cup
Banana -1 no
Cardamom powder a pinch
Salt a pinch
Ghee-1 tbsp

Method

👉In a mixing bowl add all the ingredients except ghee.Mix well .Add water little by little and make a slightly thick batter.

👉Heat paniyaram kadai add little ghee on each mould.Now pour a small laddle full of batter in to the moulds.




👉Cook in medium flame until you get a nice golden brown colour.Flip and cook on other side as well.



👉Remove the wheat appam from the moulds.serve.

How to make traditional ellu puranam kozhukattai recipe

Ingredients

Homemade Processed Rice flour/ idiyappam flour/ kozhukattai flour-1 cup or 250gms
Ellu(sesame seeds)-100gms
Grated coconut-2 tbsps
Jaggery syrup-1/2 cup
Salt-a pinch
Gingelly oil-1 tsp

Method

For Dough-
Boil water in a vessel.
For home made rice flourClick here .
In a mixing bowl add rice flour, salt, gingelly oil and hot water little by little and make a soft dough.
Cover it with clean moist muslin clothuntil use.



Dissolve jaggery in water and allow it to boil for a minute then strain it and set aside.
For PURANAM-
Wash the Ellu and drain the water and spread it in clean cloth for few minutes.

Dry roast the Ellu in a pan once it starts to pop add Jaggery syrup ,cardamom powder and finally add grated coconut and allow the mixture to thicken a bit and immediately remove from fire otherwise it will harden.set aside.Now the puranam (filling) is ready.


For kozhukattai-
Take a small lemon sized balls of the dough and slightly spread it out in your palm,next take a gooseberry sized ball of the puranam and keep it in the centre of the dough and close it.


Now place the dough in the greased kozhukattai mould and gently press it to shape.




Steam the kozhukattai in idli cooker for 7-10mins .
