Ingredients
Grated carrot-2 cups
Milk-2 cups
Sugar -3/4 cup
Grated Unsweetened khoya -1 cup
Cardamom powder -1/4 tsp
Orange food colour - few drops (optional)
Finely chopped pistachio, badam, cashews -few
Ghee-1/4 cup

Method
👉Heat ghee in a kadai add grated carrots and sauté in medium flame for 5-7 minutes until the colour changes and carrots shrink in size.
👉Now add milk and continue to cook until the carrots are well cooked .
👉Add grated unsweetened khoya and cardamom powder mix well allow the mixture to thicken.
👉Add few drops of orange food colour (this is completely optional ).
👉Now add in the sugar mix well and keep stirring and continue to cook until the mixture forms a non sticky mass , leaves the sides of the kadai and ghee oozes out.
👉Transfer the mixture to a ghee greased tray, flatten with a spatula. Sprinkle finely chopped pistachios, badam, cashews generously on top .
👉Allow the carrot burfi to cool down a bit and cut to desired shapes.
👉Cool completely and store in airtight container.
