Ingredients

For Paste-

Beetroot-1 no
Green chillies-2-3 nos
Garlic-4 nos
Curry leaves-few

Other Ingredients -

Ready made instant murukku flour-2 cups (or) use 2 cups processed rice flour and 1/4 urad dal flour
White Sesame seeds -1 tsp 
Salt-1/2-3/4 tsp 
Softened unsalted butter-1 tbsp 
Oil for deep frying

Method 


👉In a mixie jar add beetroot, green chillies, garlic, curry leaves and little water and grind to fine paste.Strain this mixture and set the beetroot purée aside.


👉In a mixing bowl add instant murukku flour, sesame seeds, salt, asafoetida , butter mix well.




👉Now add the beetroot purée little by little and knead to a soft dough.


👉Heat oil for deep frying and keep in medium flame once hot.


👉Smear oil in murukku press and fix the star shaped acchu .


👉Similarly grease few ladles with oil keep it ready.


👉Fill the murukku presser with a portion of the dough.


👉Press in circular shapes onto the greased ladles.


👉Gently drop the murukkus into the oil.Don’t disturb it for few seconds.



👉Now gently flip the murukkus making sure to cook on both sides evenly .


👉Remove the beetroot murukkus once the oil stops bubbling and colour changes.


👉Transfer the murukkus to a colander lined with tissue paper to absorb excess oil.
👉Repeat the process with rest of the dough.



👉Cool the murukkus completely and store in airtight container.

Note

✍️Ready made instant murukkus flour has processed rice flour, urad dal flour and fried gram flour and certain brands don’t add salt so check the pack for ingredients before using.
