Gulab jamun is one of India’s most popular desserts, traditionally made from khoya (milk solids) or paneer. The dough is formed into soft balls, deep-fried until golden brown, and soaked in a fragrant sugar syrup infused with cardamom and rosewater. The result? Sweet, spongy, melt-in-your-mouth goodness.
In this bread gulab jamun recipe, we substitute khoya with slices of bread, making the process quicker and more accessible without compromising on flavor.

To make bread gulab jamun, you'll need 6 slices of white or whole wheat bread, 4 tablespoons of milk to bind the dough, 1/4 cup of optional milk powder for richness, and 1/2 teaspoon of cardamom powder. Fry the dough in ghee or oil. For the sugar syrup, combine 1 cup of sugar and 1 cup of water, along with 1/2 teaspoon of cardamom powder, a few optional saffron strands, and 1 teaspoon of rosewater or kewra essence for extra flavor.
Start by preparing the sugar syrup: boil sugar and water, then add cardamom, saffron, and rosewater. Simmer for 8–10 minutes until slightly thickened. Set aside. Next, cut the crusts off bread slices, tear them into pieces, and mix with milk and milk powder. Knead into a smooth dough, adding more milk if needed. Shape the dough into small balls and fry in ghee or oil until golden brown. Drain excess oil, then soak the fried balls in warm sugar syrup for at least 30 minutes to absorb the syrup and soften.
