Uppu Seedai, a beloved Indian snack, is a staple during the Krishna Jayanthi festival. These bite-sized, round, crispy fried dough balls are bursting with flavor, thanks to a perfect blend of rice flour, urad dal flour, salt, sesame seeds , and butter.

To make Uppu Seedai, the processed rice flour, urad dal flour is sieved and is mixed with salt, sesame seeds, butter ,asafoetida . The dough is then shaped into small balls by sprinkling water little by little and deep-fried to a golden crisp. The result? Irresistible, crunchy bites that are impossible to stop at one!😋

Uppu Seedai holds a special place in Indian culture, particularly during Krishna Jayanthi. These savory snacks are a symbol of tradition and community, bringing people together in celebration.

Tips to make perfect Uppu Seedai without bursting -

✍️Always dry roast and seive the rice flour and urad dal flour before using.

✍️Add water little by little and make a firm yet soft dough. The dough should neither be too hard or too soft.

✍️Dry the Seedai balls in cloth for 10-15 minutes to remove any moisture present before frying.

✍️Fry in medium flame only and in batches, donot overcrowd the oil.

Ingredients 


Homemade Processed rice flour/(Idiyappam flour or Kozhukattai flour)-1 cup
Urad dal flour-2 Tbsps 
White sesame seeds-1 Tsp 
Salt-3/4 -1 Tsp 
Butter-1 Tbsp
Asafoetida-1/4 Tsp 
Oil - for deep frying

Method 

👉For Urad dal flour 

Dry roast 1/4 cup urad dal to light golden brown colour and cool and powder finely set aside.The urad dal flour is ready.we will be using only 2 Tbsps of the flour so store the rest in airtight container for future use.

👉Dry roast the processed rice flour in medium flame for about a minute and cool.


👉Transfer the rice flour ,urad dal flour , salt and asafoetida powder to a seive and seive the mixture well .


👉To the seived flour add white sesame seeds, softened butter and mix well until it holds shape.

👉Gradually add water to form a dough (not too tight or too loose).

👉Shape into small round balls (about 1-inch diameter).



👉Heat oil in a deep frying pan over medium heat.


👉When oil is hot, add a few Seedai balls (don't overcrowd).Don’t disturb for few seconds, then gently flip the seedais for even browning.




👉Fry until golden brown and til the oil stops bubbling 


👉Drain excess oil on paper towels.


👉 Repeat with rest of the batches.
