Ingredients

Basmati rice-250 gms or 1 cup
Brinjal-6-8 nos cut lengthwise
Onion -2 nos chopped
Tomato -2 nos chopped
Turmeric powder -1/2 tsp
Green chillies-2 nos slit lengthwise
Mustard seeds-1 tsp
Urad dal-1 tsp
Bengal gram dal-1 tsp
Salt to taste
Curry leaves and coriander leaves few
Ghee -2 tsps
Oil-2 tsps

For Masala paste

Cinnamon-2 nos
Cloves-4 nos
Cardamom-2 nos
Ginger -1 Tbsp
Garlic-6 nos
Red chillies -8-10 nos

Method

👉Grind the ingredients given for masala to fine paste adding little water set aside.

👉Wash and soak the basmati rice for 30 mins.


👉Heat ghee + oil in a pressure cooker add mustard seeds,urad dal,bengal gram dal and curry leaves saute for few seconds

👉Add onion saute well. Add green chillies and saute.

👉Next add tomatoes saute for a minute .

👉Add the brinjal saute for few seconds.

👉Now add the ground masala paste, turmeric powder,salt mix everything well.


👉Add the basmati rice mix gently.


👉Pour 1 1/2 cups of water .

👉Close the cooker and cook for 1 whistle.switch off the stove and allow the pressure to subside.

👉Open the cooker and gently mix the brinjal rice .


👉 Garnish with chopped coriander leaves and serve hot with raita and chips.

Note -

✍️Adjust the spice level according to your taste preference.
✍️You use raw rice or Seeraga samba rice or sona masoori rice too .
✍️Instead of brinjal using the same masala you can use capsicum or potato or mixed vegetables and make different rice varieties.
