Tamil Nadu Style Spicy Kathirikai Sadam | Brinjal Rice In Pressure Cooker

Brinjal Rice, also known as Kathirikai Sadam or Vangi Bath, is a delectable South Indian rice variety made with tender brinjals (eggplants), aromatic spices, and cooked rice. This dish is a perfect choice for a quick lunch or an easy lunchbox recipe, especially when prepared in a pressure cooker.

Unlike the Karnataka-style Vangi Bath, which uses a special masala powder, this Tamil Nadu-style brinjal rice features a freshly ground masala paste made with simple spices, ginger, and garlic. The result is a spicy, flavorful dish with a unique aroma that can be adjusted to suit your spice preferences.

Brinjal rice pairs wonderfully with sides like onion raita, chips, or papad, making it a complete and satisfying meal.

Health Benefits of Brinjals

1. Rich in Fiber: Brinjals are high in dietary fiber, which aids digestion and promotes gut health.
2. Low in Calories: They are a low-calorie vegetable, making this dish a guilt-free indulgence.
3. Packed with Antioxidants: Brinjals contain anthocyanins, which help fight inflammation and oxidative stress.
4. Supports Heart Health: Their potassium and flavonoid content help maintain healthy blood pressure levels.
5. Blood Sugar Regulation: The fiber and low glycemic index make brinjals a great choice for managing diabetes.

Tips for Making Perfect Brinjal Rice

1. Choose Fresh Brinjals: Use small or medium-sized brinjals that are tender and not overripe.
2. Rice Texture: Ensure the rice is cooked and cooled before mixing to prevent it from becoming mushy.
3. Adjust Spice Levels: The masala paste can be made spicier or milder based on your taste preference.
4. Use a Pressure Cooker: Cooking this dish in a pressure cooker saves time and enhances flavor.
5. Garnish: Add roasted peanuts or cashews for extra crunch and flavor.
6. Oil Choice: Sesame oil is recommended for an authentic South Indian touch.
