Ingredients 

For Paste 

Grated coconut-1/2 cup
Cumin seeds -1 Tsp 
Green chilies-1 no

Other Ingredients-

Carrot -1/4 kg
Onion-1 no
Tomato -1 no
Garlic 4-6 nos
Green chilies -2 nos
Moong dal -1/2 cup
Bengal gram dal -1/4 cup
Turmeric powder-1/4 Tsp 
Sambar powder-1/4-1/2 Tsp 
Mustard seeds-1/2 Tsp 
Urad dal-1 Tsp 
Cumin seeds -1 Tsp 
Curry leaves -few
Red chillies -1 no
Salt to taste 
Asafoetida -1/4 Tsp 
Coconut oil -1 Tbsp
Coriander leaves-few

Method 

👉Grind the ingredients given under For paste using little water to a fine paste set aside.


👉Heat coconut oil in a pressure cooker add mustard seeds, urad dal, cumin seeds, red chillies, green chilies, curry leaves, asafoetida and allow it to splutter.


👉Add onions and garlic sauté well.


👉Add tomato and sauté well.


👉Add in the carrots and sauté for a minute.

👉Add Bengal gram dal and moong dal



👉Add turmeric powder, sambar powder, asafoetida and required salt mix well .



👉Add 1 &12 cups of water and mix well.



👉Pressure cook for 3-4 whistles and allow the pressure to subside completely.


👉Now open the cooker and again switch on the gas.



👉Mash the dal and carrots lightly.


👉Boil the kootu for 5 minutes or until it thickens to desired consistency .


👉Finally add the coconut paste and mix well continue to cook for another 2 minutes.



👉Garnish with fresh coriander leaves and a tablespoon of freshly grated coconut. Mix well and switch off the gas.




👉Serve hot.
