Vellarikkai Kootu | Cucumber Kootu


Vellarikkai Kootu or cucumber kootu is delicious healthy and traditional South Indian style Kootu variety made with cucumber and moong dal. This Vellarikkai Kootu can be made in different ways like you can use Bengal gram dal instead of moong dal moreover you can add a paste of coconut, cumin seeds, green chillies instead of sambar powder. Ingredients

Cucumber -2 nos (medium sized )
Moong dal -75 gms
Onion -1 -2 nos
Garlic -6 nos
Sambar powder -1/2 Tsp 
Turmeric powder -1/4 Tsp 
Salt  to taste
Red chillies -2 nos
Mustard seeds  -1/2 Tsp 
Urad dal -1 Tsp 
Cumin seeds -1/2 Tsp 
Pepper corns -1/8 Tsp 
Curry leaves -few
Coriander leaves -few
Grated coconut  -2 Tbsps 
Oil-2-3 Tsps

Method 


👉Wash, peel and cut the cucumber into bite sized cubes.




👉Pressure cook the moong dal along with 1/4 Tsp turmeric powder and with just enough water to cover the dal for 5 whistles , mash the dal and set aside.



👉Heat oil in a kadai add mustard seeds, urad dal, cumin seeds, curry leaves, red chillies and allow it to splutter.



👉Add the garlic and  onion and sauté well.



👉Add the cucumber and sauté for a minute then pour 1/2 cup cook covered for 5-7 mins until the cucumber is 3/4 done.




👉Now add the sambar powder, turmeric powder, salt and asafoetida and sauté for few seconds.


👉Add the cooked moong dal and mix everything well.






👉Allow the kootu to boil for 5 mins .




👉Add grated coconut and freshly chopped coriander leaves and switch off the gas. 






👉Serve hot with steamed rice chapati etc..
