Sorakkai Poriyal | Bottle Gourd Stir Fry
This sorakkai poryial or bottle gourd stir fry is a delicious, healthy, simple and traditional Tamil Nadu style Poriyal variety. It is made with bottle gourd (also known as sorakkai in Tamil) and specially ground coconut and spice masala powder. It is one of the easiest poriyal or stir fry variety that can be made quickly. Ingredients
Sorakkai / Bottlegourd-2 nos medium sized or 1 big sized
Mustard seeds -1/2 Tsp
Urad dal-1 Tsp
Turmeric powder -1/4 Tsp
Curry leaves few
Salt to taste
Coriander leaves few
Oil -3 Tsps
For Masala
Cumin seeds -1 Tsp
Fennel seeds -1 Tsp
Pepper corns -1/4 Tsp
Red chillies -4 nos
Garlic -6 nos
Grated coconut -1/4 cup
Curry leaves -few

Method
👉Wash and scrape the skin of the Bottlegourd and cut to small cubes.
👉Powder the ingredients given for Masala coarsely set aside.
👉Heat oil in a kadai add mustard seeds, urad dal, curry leaves and allow it to splutter.
👉Add the Sorakkai, turmeric powder and sauté for few seconds.
👉Pour 1/2-3/4 glass of water and cook covered for 10-15 or until the Bottlegourd is done.
👉Open the lid and allow any moisture present in the veggies to evaporate completely.
👉Add required salt mix well.
👉Add the ground masala and mix everything well and continue to cook for 2-4 mins.
👉Garnish with chopped coriander leaves and switch off the gas.
👉Serve hot.
