Split Moong dal-1 cup (washed and soak for atleast 1 hour) Ginger-1 inch piece Green chillies -2 nos Turmeric powder -1/4 Tsp Asafoetida-1/4 Tsp Salt-3/4 Tsp Curd -1/2-3/4 cup Rava -1/2 cup Carrot -1/2 cup Baking soda -1/4 Tsp Coriander leaves few Mustard seeds -1/2 Tsp Urad dal-1 Tsp Bengal gram dal -1Tsp Curry leaves few Oil-1-2 Tsps

Method
👉Wash and soak the split moong dal for 1-2 hours.
👉Drain water and transfer the dal to mixie jar.
👉Add ginger, green chillies, turmeric powder and asafoetida and grind everything together to fine paste without adding any water.
👉Transfer it to a mixing bowl add required salt whisk well.
👉Add curd mix well.
👉Add rava mix well.
👉Heat oil in a tadka pan add mustard seeds, urad dal, Bengal gram dal, curry leaves and allow it to splutter. Add this tempering to the batter and mix well.
👉Add grated carrots mix well.
👉Keep covered for 15-20 minutes.
👉Add coriander leaves and baking soda mix everything well.Adjust the consistency to idli batter consistency by adding little water if needed .
👉Grease the idli plates with oil and place a cashew in each mould.
👉Pour the batter in each mould and place in a idli cooker .
👉Boil enough water in idli cooker.
👉Steam cook for 10-12 minutes until done . To check if done insert a tooth into the idli if it comes out cleans then the Idlis are cooked.
👉Allow the idlis to cook a bit and then remould.
👉Soft and fluffy moong dal idlis ready.Serve hot with chutney and sambar.
