Daangar Pachadi, also known as Urad Dal Flour Raita, is a cherished delicacy originating from the Tanjore region in Tamil Nadu. This unique dish is a blend of urad dal flour and curd, seasoned with a variety of spices.

The name of this recipe holds an intriguing history. It is said to have been brought to Tamil Nadu by Marathis who settled in the Thanjavur region many years ago. They referred to the roasted urad dal flour as "Daangar," hence the name Daangar Pachadi (with "Daangar" meaning urad dal flour and "pachadi" referring to raita).

Unfortunately, this dish has become somewhat of a lost treasure, with only a few families still preserving the recipe.

Preparing Daangar Pachadi is a relatively simple process. Begin by dry roasting the urad dal flour with cumin seeds, red chilies, and asafoetida until it reaches a golden brown color and becomes aromatic. Grind the roasted mixture into a fine powder. Next, whip a cup of curd, add salt, and mix in the urad dal flour until well combined. Adjust the consistency as needed. Finally, temper mustard seeds, urad dal, green chilies, ginger, and curry leaves to add to the raita before serving.

This flavorful urad dal raita pairs excellently with rice, idli, dosa, or as a side dish for vatha kuzhambu, rasam, and more.

Ingredients


Urad dal -2 Tbsps 
Curd-1 cup
Cumin seeds -1 tsp
Red chillies-2 nos
Salt to taste 
Mustard seeds -1/2 tsp
Urad dal-1 tsp
Asafoetida-1/8 tsp
Ginger-1 inch piece
Green chilies -1 no
Curry leaves 
Coconut oil-1 tsp

Method 

👉Dry roast urad dal to light golden brown colour and then add cumin seeds, red chillies, asafoetida and sauté for few seconds , switch off the gas and transfer to mixie jar and cool completely and powder finely.



👉In a mixing bowl add curd, required salt and little water whisk the curd well without any lumps.


👉Now add in the ground urad dal flour and mix well add extra water and adjust consistency.


👉Heat coconut oil in a pan add mustard seeds, urad dal, curry leaves, green chillies, ginger and sauté well. Add this tempering to the raita and mix well.




👉Serve.
