How to Make Traditional Karumbu Chaaru Pongal (Sugarcane Juice Pongal) for Pongal Festival

The rich flavours of ghee, cardamom, and roasted nuts make it a comforting treat that’s sure to bring the essence of Pongal into your home.I have prepared this pongal entirely in pressure cooker to save time , however you can cook it in traditional open pot method too , but it requires more water and constant monitoring.

Tips for a Perfect Karumbu Chaaru Pongal:

✍️Use freshly extracted sugarcane juice for authentic flavor and sweetness.
✍️Taste the sugarcane juice beforehand and add jaggery or diamond sugar candy or sugar to adjust sweetness accordingly.
✍️Short-grain rice varieties like Ponni or Sona Masuri give the perfect creamy consistency.
✍️A hint of cardamom powder and roasted cashews enhance the flavor profile.You can add a pinch of saffron or edible camphor too.
✍️Simmer the Pongal on low heat to ensure the rice absorbs all the flavors for a luscious texture.

Ingredients 


Raw rice 1/2 cup
Moong dal -1/8 cup
Sugarcane juice -2 &1/2-3 cups
Diamond sugar candy-1/4 cup (optional)
Cardamom powder-1/4 tsp
Cashews-few
Raisins-few
Ghee-1-2 tbsps

Method 

👉Dry roast the moong dal and raw rice for few seconds, wash well.


👉Add sugarcane juice mix well.


👉Add cardamom powder.



👉Add diamond sugar candy or jaggery or sugar if the sugarcane juice is less sweet.


👉Add another 1/2 cup water mix well.


👉Pressure cook for 4 whistles, switch off the gas and allow pressure to settle completely.


👉Mash the Pongal well and again switch on the gas allow to boil in medium flame for few minutes.



👉Add ghee fried cashews and raisins to the sugarcane Pongal and mix well.



👉Switch off the gas.


👉Enjoy delicious karumbu chaaru pongal with your loved ones 😋.



For extracting sugarcane juice:

👉Remove the outer skin of the sugarcane, cut to bite size pieces, grind along with little water and extract the juice.
👉Strain the juice and use in the Pongal.
👉Alternatively you can use store bought sugarcane juice.
