Tamil Nadu-Style Poricha Kootu Recipe 


Poricha Kootu is a traditional dish from Tamil Nadu cuisine that combines lentils, vegetables, and freshly roasted spices. It’s a comforting and flavorful recipe that’s been a part of South Indian kitchens for generations. The name “Poricha” means “fried” in Tamil, referring to the lightly roasted spices used in the dish. The key ingredient is a freshly ground spice mix made with roasted urad dal, black pepper, and dried red chilies, blended with coconut. This spice mix gives Poricha Kootu its unique taste and aroma.

This dish is incredibly versatile. You can make it with vegetables like beans, cabbage, green leafy vegetables,ash gourd, chow chow (chayote), or snake gourd. Here I have used a combination of broad beans(Avarakkai)and carrots for this recipe.Cooked moong dal pairs perfectly with the vegetables, and the roasted spices bring everything together. It’s delicious with steamed rice and ghee or as a side dish with sambar and rasam.

Ingredients 

For masala paste -

Urad dal-1 & 1/2 tbsp
Cumin seeds-1 tsp
Pepper -1/2 tsp
Red chillies-4-6 nos
Grated coconut -2 tbsps
Asafoetida -1/4 tsp
Oil -1 tsp

Other Ingredients 

Avarakkai (broad beans)-1/4 kg chopped 
Carrot-1 cup chopped 
Moong dal -1/2 cup
Mustard seeds -1/2 tsp
Urad dal -1 tsp
Curry leaves few
Turmeric powder -1/4 tsp
Salt to taste 
Coriander leaves-few
Oil  -2 tsps

Method 

👉Heat a tsp of oil and sauté the ingredients given under for masala paste to light golden brown colour, cool and grind to fine paste adding little water, set aside.


👉Heat oil in a pressure cooker add mustard seeds, urad dal, cumin seeds, curry leaves and allow it to splutter.
Add the chopped avarakkai (broad beans)and carrot mix well.


👉Add moong dal, turmeric powder , salt and  1&1/2 -2 cups of water and mix well.


👉Pressure cooker for 4-5 whistles, switch off the gas and allow the pressure to subside completely.


👉Now open the cooker and again switch on the gas.



👉Mash the dal well and then add the ground masala paste and mix well.




👉Cook for 2-4 minutes or until the kootu thickens to desired consistency.


👉Garnish with coriander leaves and grated coconut.



👉Switch off the gas and serve hot.
