Homemade Chyawanprash
Chyawanprash is an Ayurvedic herbal jam like mixture celebrated for its immunity-boosting, rejuvenating, and overall health-enhancing properties. The store bought chyawanprash has more than 20 ingredients which include many herbs that are hard to procure and they use preservatives for long shelf life, however our simple homemade chyawanprash doesn’t contain any preservatives at all and just uses the ingredients readily available at home without compromising on taste or health benefits.In some preparations they have used gingelly oil along with ghee but I have used only ghee you can use both in equal quantities if you like.
Moreover adding honey once the mixture is cooled is also recommended in few recipes but I have avoided honey in my recipe.

To prepare this chyawanprash either steam or pressure cook the Amla until soft, deseed, and grind into a paste. Dry roast spices like fennel, cumin, peppercorns, cinnamon, cloves, cardamom, dried ginger, javitri, bay leaf, and grind them into a powder . Cook the Amla paste on low flame in ghee until thickened, then add jaggery , stirring until it forms a smooth, jam-like consistency. Mix in the spice powder and saffron, blend well, and let it cool. Store in an airtight jar for freshness.

Homemade Chyawanprash Recipe Video
Method
👉Wash and pressure cook the amla along with 1 cup water for 4 whistles. Drain the water and deseed the amla, transfer to mixie jar and grind to smooth paste adding little water if required, set aside.
👉In a pan dry roast all the ingredients given under for powder until aromatic and till the colour changes to light golden brown colour. Transfer to mixie jar cool and powder finely, sieve the powder and set aside.
👉In a pan heat ghee, pour the Amla paste stir well and cook in medium flame for 5 minutes.
👉Add powdered jaggery mix well and continue to cook until colour changes and mixture thickens slightly.
👉Add the powdered spices mix well and cook for another 5 minutes stirring continuously. Add saffron now mix well.Once the mixture changers to dark brown colour, ghee oozes out and forms a nonsticky mass switch off the gas.
👉Cool completely,store in a sterilised glass bottle.
