Today I have made a dry version of this classic aloo gobi masala in South Indian style.The star ingredients of this recipe are potatoes and cauliflower, enhanced with onions, and a special masala powder made with urad dal, coriander seeds, cumin seeds,fenugreek, mustard red chillies tamarind and grated coconut.The preparation of this dish is quite simple and can be done quickly.Basically the  veggies sautéed to perfection and then roasted in the masala powder and served hot , that’s it.

The dish can be prepared in various ways, such as stir-frying, pressure cooking, or baking, allowing for versatility in texture and flavor. Ingredients-

For Masala-

Urad dal-1 Tbsp
Fenugreek -1/8 Tsp 
Mustard -1/8 Tsp 
Cumin seeds-1/2 Tsp 
Coriander seeds-2 Tbsps 
Red chillies -6-8 nos
Grated coconut -2 Tbsps 
Tamarind -small goose berry sized
Oil-1-2 Tsps 

Other ingredients 

Potato -2-3 nos (washed, peeled and cubed)
Cauliflower -1 cup (cleaned and cut to florets )
Onion-2 nos chopped 
Ginger garlic paste -1 Tsp 
Turmeric powder -1/2 tsp
Salt to taste 
Mustard seeds-1/2 Tsp 
Cumin seeds-1/2 Tsp 
Red chilli-1 no
Asafoetida-1/4 Tsp 
Curry leaves -few
Coriander leaves-few
Oil-2 Tbsps

Method 

👉Heat oil in a pan add the ingredients given under for masala and sauté until golden brown colour transfer to mixie jar and cool grind coarsely set aside.



😋Heat oil in a kadai add mustard seeds, cumin seeds, curry leaves, red chilli, asafoetida and allow it to splutter.


👉Add onion sauté well.



👉Add ginger garlic paste sauté for few seconds.


👉Add potatoes, turmeric powder and sauté for a minute or two.Add 1/2 cup water cook covered until the potatoes are half done.


👉Now add the cauliflower mix well and add another 1/2-3/4 cup water cook covered until the veggies are cooked.



👉Add required salt and the freshly ground masala powder mix everything well and sauté for few minutes.


😋Cook covered for another 2 minutes.


👉Garnish with fresh coriander leaves and serve hot.
