Puli Milagai is a spicy sweet and tangy South Indian condiment made with green chilies simmered in tamarind extract and tempered with spices.

It is a popular and traditional accompaniment in South Indian cuisine and is loved for its vibrant taste and versatility and can be prepared in no time.Whether its a simple meal or a feast this tangy chutney adds a burst of flavours that elevate the whole dining experience.Puli refers to tamarind in Tamil and Milagai refers to green chilies or chillies in general hence the name Puli Milagai .

The main ingredients include green chilies , tamarind ,spices and touch of sweetness which is imparted by jaggery.Tamarind provides a tangy base while spices such as mustard seeds, fenugreek, asafoetida adds complexity to the flavour profile and jaggery gives the sweetness that balances the spiciness and tanginess of the dish.

This puli milagai pairs perfectly with idli, dosa, curd rice even chapati etc.. It can be stored for a week in room temperature and for 15-20 days in refrigerator.

Ingredients 

Green chillies -50 grams 

Tamarind extract -1/2 cup

Jaggery-1 tbsp 

Salt to taste 

Mustard seeds -1/4 tsp 

Fenugreek-1/8 tsp 

Asafoetida-1/8 tsp 

Curry leaves-few

Gingelly oil -2 tbsps

Method 

👉Heat gingelly oil in kadai add mustard seeds, fenugreek seeds, asafoetida and curry leaves and allow it to splutter.


👉Add the chopped green chillies and sauté for 2 minutes, then add tamarind extract, required salt and 1/4 cup water mix well and cook covered for 5 minutes until the green chillies are cooked.


👉Finally add jaggery mix well and switch off the gas at desired consistency.
