In a pan, oil and ghee is heated, and cumin seeds are added, followed by onions and ginger-garlic paste. The  chopped spinach is added to the pan, and everything is cooked together until the spinach is wilted , then masala spice powders are added and then cooked potatoes are added and mixed well until all the ingredients are well combined.

Ingredients 


Spinach (Palak )-2 cups 
Potato-2-3 nos 
Onion-2 nos 
Tomato-2 nos 
Green chillies-1-2 nos 
Ginger garlic paste  -1 tsp 
Turmeric powder-1/2 Tsp
Red chilli powder-1 tsp 
Coriander powder-1 1/2 Tsps 
Sabji masala -1 Tsp(optional)
Garam masala powder-1/4 tsp 
Salt to taste
Cumin seeds -1 tsp 
Oil -1-2 Tsps 
Ghee-1 Tsp

Method 

👉Wash and cut the spinach (Palak) and set aside .


👉In a pressure cooker add the potatoes and required water just enough to cover the potatoes and pressure cook for 2 whistles switch off the gas allow pressure to subside completely. Drain water and set the cooked potatoes aside.


👉Heat oil and ghee in a kadai add cumin seeds, green chilies, onions and sauté well. 


👉Next add ginger garlic paste and sauté for few seconds 



👉Add tomatoes and cook well.


👉Add the chopped Palak and cook until done.




👉Add turmeric powder, red chilli powder, coriander powder, Sabji masala,Garam masala and required salt mix everything well sauté for a minute. 


👉Now add the cooked potatoes and mix well and cook covered for 2-4 minutes.





👉Switch off the gas and serve hot.
