Badam Kheer is a rich and creamy dessert made with almonds, milk, condensed milk or sugar, and saffron. It is a perfect dessert to celebrate the festival of Holi with your family and friends.

One of the popular sweet dishes that is prepared during Holi is Badam Kheer.
Badam Kheer is easy to make and can be prepared in just a few simple steps. First, soak the almonds in water for a few hours, then peel and grind them into a fine paste. Next, heat the milk in a pan and add the almond paste to it. Stir well and let it cook on low heat until the milk thickens. Add condensed milk or sugar and saffron to the milk and mix well. Let it cook for a few more minutes until the sugar dissolves and the kheer reaches the desired consistency.
Badam Kheer is traditionally served chilled, but you can also serve it warm if you prefer. Garnish it with chopped nuts and saffron strands and rose petals to make it look more appealing.

 Ingredients 

Badam -1/2 cup soaked in water and peeled

Full fat milk or regular milk-500 ml+150 ml

Condensed milk -150 ml or as per taste 

Saffron - few

Cardamom powder-1/4 Tsp

Ghee -1 tsp

Method 

👉Soak the badam overnight in water or in hot water for 2-3 hours , peel and grind the badam to a fine paste adding 150 ml of milk set aside.




👉In a kadai heat a Tsp of ghee then add 500 ml of milk and bring it to a boil and allow it to thicken slightly.





👉Now add the ground badam paste mix well and keep stirring until the raw smell goes and kheer thickens.




👉Add saffron , cardamom powder and condensed milk and combine everything well.






👇Allow the badam kheer to boil to desired consistency.



👉Garnish with chopped badam, Pista and rose petals(optional) .





👉Serve chilled or hot.

Note -

✍️I have used full fat milk but you can regular 3% fat milk

✍️Instead of condensed milk use 1/2-3/4 cup of sugar .
