Stuffed Onion Masala / Bharwa pyaz ki sabji



This stuffed onion masala or bharwa pyaz ki sabji is a delicious, spicy and super easy to make North Indian style side dish. It can be prepared with just the basic ingredients available at home. This onion curry is generally made with baby onions or shallots but can be made with regular big onions as well. There are many variations of this recipe in terms of the combination of the masala used. Here I have posted one of the simplest variety of this recipe. It goes very well roti, naan, chapati, ghee rice, pulov and even dosa and poori.

Ingredients 

Onion-5-6 nos small sized 

Cumin seeds-1 Tsp 

Asafoetida-1/8 Tsp 

Oil -3-4 Tbsps 

Kasuri Methi leaves few

Coriander leaves few 


For Stuffing 

Red chilli powder -1 Tbsp (add according to your spice preference )

Coriander powder -2 Tbsps 

Turmeric powder -1/2 Tsp 

Kashmiri chilli powder -1/2 Tsp 

Jeera powder -1/2 Tsp 

Amchur powder -1/2 Tsp 

Garam masala powder -1/2 Tsp 

Salt to taste 


For Paste

Tomato -3 nos 

Green chillies -2 nos

Ginger -1 inch piece

Garlic -5-6 cloves

Method 

👉Peel the skin of the onion, wash well,  now make 4 slits on the top of the onion until 3/4 length making sure not to cut the onions fully.






👉Grind the ingredients given under  For paste  to a smooth paste without adding water, set aside.




👉Now in a mixing bowl add all the masala powders given under For stuffing mix well until uniformly combined.



👉Fill this stuffing inside the slits in the onion gently without breaking it. Reserve the remaining masala for later use.





👉Heat oil in a kadai add the stuffed onions gently one by one. Cook covered for 5 mins flipping the onions occasionally. 




👉Remove the onions on to a plate set aside. 



👉In the same oil add cumin seeds, asafoetida and allow it to splutter. 






👉Add the tomato paste and rinse a little water (1/2 cup)in the mixie jar and add it to the mixture and cook covered  for 2-4 mins.






👉Next add the remaining masala powder that we prepared for the stuffing, mix well. 



👉Add 1 cup water cook covered for 5 mins or until the mixture thickens and oil oozes on top.








👉Now add the onions and gently mix with the gravy. Check for salt add if needed.Cook covered for just 2 minutes.






👉Garnish with Kasuri methi and coriander leaves .Switch off the gas.




👉Serve hot with roti, chapati, naan, ghee rice, peas pulov etc..
