Vengaya Kurma or Onion Kurma or Green Kurma recipe

This vengaya kurma or onion kurma or green kurma is a very traditional, delicious and super easy to make kurma variety. This kurma goes very well with tiffin varieties like idli,dosa,appam, idiyappam and chapati.It hardly takes 20 mins to make this kurma. This is my family's heirloom recipe, we call this pacchai kurma referring to the green colour of the kurma. We make this kurma only with lots of onions which is sliced thinly lengthwise. Make sure that you don't overcook the onions they must be slightly crunchy. I love having this kurma along with crispy dosas😋😬.  Ingredients

For Kurma Masala-

Grated coconut-1/2-3/4 cup
Onion-1 no
Ginger-1 inch piece
Garlic-4 nos
Green chillies-5-6 nos
Coriander powder-3 tsps
Turmeric powder-1/2 tsp
Fennel seeds-1 tsp
Cloves-3 nos
Cinnamon-2 nos
Cardamom-1 no
Poppy seeds-1-2 tsps
Cashews-6 nos
Coriander leaves

Others Ingredients-

Onion-3-4 nos sliced lengthwise
Tomato-2 nos chopped
Fennel seeds-1 tsp
Bay leaf -1 no
Salt 
Oil-2 Tbsps
Coriander leaves

Method

👉First grind all the ingredients given under kurma masala to a fine paste adding water.set aside.




👉Now heat oil in a kadai add fennel seeds,bay leaf and saute for few seconds.




👉Add onions and saute well until they are half done.



👉Next add tomatoes and saute until they are soft.




👉Now pour the ground kurma paste and saute for 2 mins then add 1 -1 1/2 cups of water , required salt and allow it to boil for 5-7 mins until the kurma thickens to desired consistency and raw smell goes.








👉Garnish with coriander leaves and serve hot.

Note-
Using the same masala you can add any vegetable of your choice and make mixed veg kurma.
This kurma tends to thicken after sometime so adjust consistency accordingly.
