Brinjal Capsicum Masala recipe or baingan shimla mirch sabji

This brinjal capsicum masala is a delicious dry curry variety that can be prepared very easily.
It goes very well with chapati, phulkas, peas pulov etc.. There are many versions of this recipe and the recipe posted below is my version. I have made a simple masala paste with spices, ginger, garlic and onions which is added to the veggies that increases the flavour quotient of this dish. Adding this paste is optional, you can do a very simple version by just adding red chilli powder and turmeric powder to the veggies and just saute them.
