Brinjal Capsicum Masala recipe or baingan shimla mirch sabji

This brinjal capsicum masala is a delicious dry curry variety that can be prepared very easily.
It goes very well with chapati,phulkas,peas pulov etc.. There are many versions of this recipe and the recipe posted below is my version. I have made a simple masala paste with spices,ginger, garlic and onions which is added to the veggies that increases the flavour quotient of this dish. Adding this paste is optional,you can do a very simple version by just adding red chilli powder and turmeric powder to the veggies and just saute them. Ingredients

For Masala-

Cinnamon-2 nos

Fennel seeds-1 tsp

Onion-1/2 no

Green chillies-1 or 2 nos

Ginger-1 inch piece

Garlic-4 cloves

Other ingredients-

Brinjal-1/4 kg chopped to cubes

Capsicum-1 or 2 nos chopped to cubes

Onion-2 nos chopped finely

Tomato-2 nos chopped finely

Red chilli powder-1 tsp

Turmeric powder-1/4 tsp

Salt

Cumin seeds-1 tsp

Oil -3 tsps

Coriander leaves

Method

👉First grind the ingredients given under For paste to coarse paste adding very little water set aside.



👉Heat oil in a kadai add cumin seeds,onion and saute well until onions turn translucent.





👉Add tomato and cook until they are half done.




👉Add the brinjal and saute for few seconds and cook covered for 5 minutes until they are half done.(Sprinkle little water if needed)




👉Now add capsicum and cook covered for 2-4 min until they are are half done.




👉Next add the ground paste , turmeric powder,red chilli powder,salt and mix everything well. Again cook them covered for just 2 mins.



👉Then remove the lid and continue to saute the veggies for another 4-5 mins in medium flame.


👉Garnish with coriander leaves and remove from fire.




👉Serve hot.
