Aloo Bhindi Sabji or Potato Ladiesfinger Masala

Aloo Bhindi Sabji is a delicious and an all time classic Indian sabji (dry curry variety) recipe.The potatoes and ladiesfinger are cooked and sauteed with spices
like red chilli powder, coriander powder,garam masala etc to make it finger licking good. Its a very simple and basic recipe and can be done quickly. It is served with pulkas, chapati, peas pulov, plain rice, sambar, rasam, curd rice etc.. Check out how to make this traditional and delicious aloo bhindi sabji recipe below.

Ingredients

Potato-2 nos (skin removed & chopped to cubes)

Ladies Finger/bhindi-1/4 kg (washed,wiped & cut to 1 inch pieces)

Onion- 2 nos chopped

Tomato- 2 nos finely chopped

Ginger garlic paste-1 tsp

Red chilli powder-1 tsp

Coriander powder-2 tsps

Turmeric powder-1/2 tsp

Cumin powder-1/2 tsp

Garam masala powder-1/4 tsp

Cumin seeds-1 tsp

Salt to taste

Coriander leaves few

Oil- 1-2 Tbsps


Method

👉Boil the potatoes until they are 3/4 th done and set aside.


👉Heat oil in a kadai add cumin seeds and allow it to splutter.


👉Add onion saute well until they are translucent.

👉Add ginger garlic paste and saute for few seconds.


👉Add tomatoes and saute well until they are soft and mushy.


👉Add the ladies finger , sprinkle very little water and continue to fry well in medium flame until they are 3/4 done.



👉Add the boiled potatoes and mix everything well.


👉Now add red chilli powder, coriander powder turmeric powder, cumin powder,garam masala powder and salt mix everything well.Saute for 5 minutes in medium flame.




👉Garnish with coriander leaves and serve hot.

Note-

✍️You can first fry the potato and ladies finger seperately and then saute with the spices.

✍️You can add amchur powder (dry mango powder) and 1/4 tsp lemon juice at the end  too for extra zest.
