Aloo Bhindi Sabji | Aloo Bhindi Fry | Potato Ladies Finger Masala
Ingredients
Potato-2 nos (skin removed & chopped to cubes)
Ladies Finger/bhindi-1/4 kg (washed,wiped & cut to 1 inch pieces)
Onion- 2 nos chopped
Tomato- 2 nos finely chopped
Ginger garlic paste-1 tsp
Red chilli powder-1 tsp
Coriander powder-2 tsps
Turmeric powder-1/2 tsp
Cumin powder-1/2 tsp
Garam masala powder-1/4 tsp
Cumin seeds-1 tsp
Salt to taste
Coriander leaves few
Oil- 1-2 Tbsps
Method
👉Boil the potatoes until they are 3/4 th done and set aside.
👉Heat oil in a kadai add cumin seeds and allow it to splutter.
👉Add onion saute well until they are translucent.
👉Add ginger garlic paste and saute for few seconds.
👉Add tomatoes and saute well until they are soft and mushy.
👉Add the ladies finger , sprinkle very little water and continue to fry well in medium flame until they are 3/4 done.
👉Add the boiled potatoes and mix everything well.
👉Now add red chilli powder, coriander powder turmeric powder, cumin powder,garam masala powder and salt mix everything well.Saute for 5 minutes in medium flame.
👉Garnish with coriander leaves and serve hot.

Note-
✍️You can first fry the potato and ladies finger seperately and then saute with the spices.
✍️You can add amchur powder (dry mango powder) and 1/4 tsp lemon juice at the end too for extra zest.
