Potato Ulli Karam / Aloo ulli karam or bangaladumpa ulli karam

This potato ulli karam is an delicious, spicy and very traditional recipe from Andhra and Telegana region.  In this recipe the potatoes(bangaladumpa in Telugu) are sauteed in onion (ulli) paste along with spices. It is a very simple recipe and can be done very quickly. For this recipe I have used green chillies you can use red chillies or red chilli powder too.Moreover you can use baby potatoes instead of regular potatoes.Make sure that you saute the ground onion paste well until raw smell goes then only you will get the perfect taste. Ingredients

For Paste -

Onion-3 nos
Garlic-3 nos
Green chillies-5-6 nos
Cumin seeds (jeera)-1 tsp

Other ingredients

Parboiled potatoes-4 nos (skin removed and chopped to cubes)
Turmeric powder-1/4 tsp
Mustard seeds-1/2 tsp
Urad dal-1 tsp
Bengal gram dal-1 tsp
Red chillies-2 nos
Asafoetida a pinch
Salt to taste
Oil -2-3 tsps
Curry leaves and coriander leaves few

Method

👉Grind the ingredients given for paste coarsely without adding water set aside.


👉Parboil the potatoes(make sure they are only half cooked), remove the skin and cut into cubes.
Heat oil in a kadai add mustard seeds,urad dal,bengal gram dal,red chillies and curry leaves allow it to splutter .

👉Now add the ground paste and add little water and saute for 5 minutes in medium flame.


👉Add turmeric powder and asafoetida mix well


👉Add parboiled potatoes ,salt and cook covered for 5 mins .





👉After 5 mins remove the lid and roast the potatoes for 2-4 mins( add oil if needed).


👉Garnish with coriander leaves and switch off the stove.serve hot.
