Instant Wheat Dosa | Gothumai Dosai
Wheat Dosa, also known as Gothumai Dosai, is a quick and delicious South Indian dosa variety made with wheat flour and rice flour. This instant dosa recipe is perfect for busy mornings or when you’re short on time but crave something crispy and flavorful. What sets this dosa apart is its simplicity—it doesn’t require fermentation and can be prepared in a matter of minutes.
Traditionally, wheat dosa is topped with finely chopped onions, green chilies, and fresh coriander for an added crunch and a burst of flavor. The key to making a perfect wheat dosa lies in achieving the right batter consistency. It should be slightly watery, like rava dosa batter, allowing it to spread easily on the tawa. The result is a thin, crispy dosa with golden edges that pairs beautifully with coconut chutney, tomato chutney, or even sambar.
This dosa is a versatile dish, as you can customize it with additional toppings like grated carrots, curry leaves, or even a sprinkle of black pepper for a spicier kick. It’s a healthier alternative to regular dosa, thanks to the wheat flour, which is rich in fiber and nutrients.
Tips for Making Perfect Wheat Dosa:
1. Batter Consistency: The batter should be watery, neither too thick nor too thin. If the batter thickens as it rests, add water and mix well before each dosa.
2. Mix the Batter: Stir the batter thoroughly before pouring it onto the tawa, as the flours tend to settle at the bottom.
3. Heat the Tawa Properly: Ensure the tawa is hot before pouring the batter, but reduce the flame to medium while cooking for even crispiness.
4. Pour, Don’t Spread: Unlike regular dosa, pour the batter from a height and let it spread naturally. Do not use the ladle to spread the batter.
5. Grease the Tawa: Lightly grease the tawa with oil before each dosa to prevent sticking. Use a halved onion or a paper towel for even greasing.
6. Cook on Medium Flame: Cook the dosa on medium flame to ensure the edges crisp up without burning.
7. Toppings: Add finely chopped onions, green chilies, or grated carrots on top of the batter immediately after pouring for extra flavor and texture.
Serving Suggestions:
• Serve wheat dosa with coconut chutney, tomato chutney, or mint chutney for a classic combo.
