Aloo Simla Mirch Sabji | Potato Capsicum Sabji
Ingredients
Potato -2 nos chopped to cubesCapsicum -2 nos chopped to cubes
Onion -2 nos ground to coarse paste
Tomatoes -2 nos pureed
Ginger garlic paste -1 tsp
Cumin seeds -1 tsp
Red chilli powder -1 tsp
Coriander powder -2 tsps
Turmeric powder -1/2 tsp
Garam masala powder -1/2 tsp
Salt to taste
Coriander leaves few
Oil -1 tbsp
Method
👉Heat oil in a kadai add cumin seeds allow it to splutter add onion paste saute for a minute.👉Next add ginger garlic paste sauté for few seconds.
👉Add potatoes sauté for 2-4 mins.
👉Add tomato puree sauté well.
👉Add the capsicum and saute for few seconds and then add 1/2 cup water, close the kadai and cook until they are 3/4 done and all the moisture dries up.
👉Add red chilli powder,coriander powder,turmeric powder,garam masala powder, salt and mix everything well.
👉Continue to cook for another 5 mins in medium flame .
👉Garnish and serve hot.

✍️I have used red and green colour capsicums for this recipe but traditionally only green colour capsicum is used.
