Aloo Simla mirch sabji | Potato capsicum sabji

Aloo Simla mirch sabji also known as potato capsicum masala is an delicious North Indian side dish (dry curry) variety made with
potatoes and capsicum as the main ingredients and sautéed along with masala spices.It is a basic and simple recipe which can be prepared very quickly.Check out the recipe below.

Ingredients

Potato -2 nos chopped to cubes
Capsicum -2 nos chopped to cubes
Onion -2 nos ground to coarse paste
Tomatoes -2 nos pureed
Ginger garlic paste -1 tsp
Cumin seeds -1 tsp
Red chilli powder -1 tsp
Coriander powder -2 tsps
Turmeric powder -1/2 tsp
Garam masala powder -1/2 tsp
Salt to taste
Coriander leaves few
Oil -1 tbsp

Method

👉Heat oil in a kadai add cumin seeds allow it to splutter add onion paste saute for a minute.

👉Next add ginger garlic paste sauté for few seconds.

👉Add potatoes sauté for 2-4 mins.

👉Add tomato puree sauté well.

👉Add the capsicum and saute for few seconds and then add 1/2 cup water, close the kadai and cook until they are 3/4  done and all the moisture dries up.

👉Add red chilli powder,coriander powder,turmeric powder,garam masala powder, salt and mix everything well.


👉Continue to cook for another 5 mins in medium flame .

👉Garnish and serve hot.

Serves -4

Note

✍️I have used red and green colour capsicums for this recipe but traditionally only green colour capsicum is used.
