How to make vendakkai rasam / ladies finger rasam


 Vendakkai Rasam (also known as Ladiesfinger Rasam) is a delicious and unique South Indian rasam variety made with okra (ladiesfinger) as the star ingredient. This rasam stands out from the traditional rasams due to the method of preparation, where the ladiesfinger is first sautéed and then cooked in a tangy tamarind extract along with freshly ground rasam powder.

The okra adds a mild, earthy flavor and helps in thickening the rasam, giving it a distinct texture compared to other rasams. It is a wonderful blend of spicy, tangy, and aromatic flavors, making it an absolute comfort food, especially when served with steamed rice.

Ingredients

Ladies finger -3 -4 nos chopped
Tamarind extract from small lemon sized tamarind
Asafetida a pinch
Salt to taste
Jaggery a small piece
Mustard seeds -1/4 tsp
Cumin seeds -1 tsp
Red chillies -2 nos broken
Oil -1 tsp
Curry leaves and coriander leaves few

For Rasam powder-

Cumin seeds -1 tsp
Peppercorns -1/2 tsp
Coriander seeds -1 tbsp
Toor dhal -1 tsp
Red chillies -2-4 nos
Garlic - 4 cloves

Method

👉Wash and cut the ladies finger to desired shape.



👉Dry roast the ingredients given under rasam powder and grind to coarse powder.set aside.



👉In a vessel add the tamarind extract ,turmeric powder,salt, required water mix well and keep it ready.

👉Now heat oil in a kadai add mustard seeds,cumin seeds,red chillies, curry leaves and asafetida allow it to crackle.

👉Add the ladies finger and saute well until it's 3/4 th done.


👉Once the ladies finger is done pour the tamarind mixture and allow it to boil for 5 mins.


👉Finally add the freshly ground rasam powder and mix well allow it to boil for just 2 mins.


👉Add jaggery mix well and garnish with coriander leaves and serve hot .

Serves 4-6
