Mangai Sadam | Raw Mango Rice
Mangai Sadam (Raw Mango Rice) is a tangy, flavorful, and refreshing South Indian mixed rice variety made with the goodness of raw mangoes. The raw mangoes are grated or chopped and cooked with a simple paste of ginger and green chilies, which is then sautéed along with spices and mixed with cooked rice. The dish is quick to make and bursts with fresh, zesty flavors.
Mangai Sadam is especially popular during the mango season and is a perfect way to enjoy the tartness of raw mangoes in a savory dish. It is a light, yet satisfying meal that pairs beautifully with yogurt, sambar, or any spicy curry.
Tips for Making Perfect Mangai Sadam
1. Choose a Tart Mango: Use a firm and tart raw mango for the best flavor. The sourness of the mango is what gives the rice its signature tangy taste.
2. Use Fresh Spices: Fresh ginger and green chilies are essential for the authentic taste of the ginger-chili paste that forms the base of the dish.
3. Rice Texture: Make sure the rice is cooked and fluffy, not mushy. Basmati rice works great, but medium-grain rice also gives good results.
4. Adjust Spice Levels: If you prefer a milder dish, reduce the number of green chilies.
5. Tamarind Addition: You can add a small amount of tamarind paste if you want an extra punch of tanginess.
6. Serving Ideas: Mangai Sadam is traditionally served with yogurt, papad, or pickle. It also pairs well with a simple vegetable curry or sambar.
