 Jangiri is a yummy and traditional Indian sweet made with urad dal and sugar.This mini Jangiri is nothing but a miniature of regular jangiris for those who find it difficult to make the traditional flower shaped jangiris, but the method is the same for both. It is also called as Imarti,amriti,emarti,jaangiri etc. in various parts of India.Below are few of the tips
to follow to make a perfect jangiri such as-

1.First make the sugar syrup ready.
2. Make the batter in right consistency(like vada batter)
3. If you don't have janjiri cloth use a Ziploc bag fill it with batter, make a cone, cut the tip of it and use.
4. You can also use three hole murukku disc in murukku maker fill it with batter and make small janjiris too.
5.Make sure the oil is hot enough by dropping a small ball of the batter if it comes up immediately then the oil is ready .
6.While piping the jangiri into the oil always slow the flame and allow it to cook in medium flame.
Do not cook the jangiri too long then it will not soak in the sugar syrup.

Ingredients

Urad dhal-1 cup
Rice flour-1 tbsp
Orange food colour a pinch
Oil for frying
JANGIRI cloth

For sugar syrup

Sugar-2 cups
Water-1 cup
Rose essence -1/4 tsp


Method

👉Soak urud dhal for one hour and drain the water completely and grind it to smooth soft and fluffy paste like vada batter(donot add much water).
👉Mix the rice flour and orange colour to the batter.



👉Make the sugar syrup ready in a vessel by dissolving sugar in water and allow it to boil and bring it to one string consistency.
👉Add rose essence remove from fire and set aside.



👉Heat oil in a pan for deep frying.
👉First wet the inner side of the janjiri cloth lightly with water so that the batter doesnot stick to the cloth.


👉Place a laddle full of batter in the centre of the cloth and make a cone,hold the cloth tightly and start making janjiris(small circular shapes)on the hot oil.Keep the flame in medium throughout.Be very cautious while doing this.
👉Cook it by flipping it on both sides in a medium flame until the oil stops bubbling.
👉Remove from fire and immediately add to the sugar syrup.


👉Let it soak for sometime and remove it from the syrup.


👉Let it cool ,store it in a dry airtight container.
