Seeraga samba vegetable biryani

Seeraga samba vegetable biryani is on of the most yummiest biryani made with special rice variety called seeraga samba.It is also called biryani rice.In down south regions of Tamilnadu most of the people use only this rice variety to make biryanis.It is a very aromatic and flavourful rice variety.Check out how to make this traditional south indian biryani variety below.

Ingredients 

Seeraga samba rice- 1 cup
Mixed vegetables-
(carrot,beans,potato,cauliflower)-1 cup diced
Onion-3 nos
Tomato -2 nos
Ginger garlic paste-1 tsp
Curd -1/2 cup
Red chilly powder -1 tsp
Coriander powder -2 tsps
Turmeric powder -1/2 tsp
Garam masala powder -1/2 tsp
Cinnamon,cloves,cardamom  few
Bay leaves 1 no
Pudina leaves a few
Salt to taste
Ghee+oil-2 tbsps

Method 

👉First in a vessel add cinnamon, cloves, cardamom, bay leaves, pudina leaves, tomatoes, ginger garlic paste, red chilly powder, coriander powder, turmeric powder, garam masala powder and curd mix everything set aside for 10 mins.
👉Wash and soak the seeraga samba rice for 15 mins.
👉Cook the seeraga samba rice with 1 1/2 cups of water  and 1 tsp of ghee+ oil in a pressure cooker for 2 whistles set aside.
👉Cook the vegetables separately in pressure cooker for 2 whistles .drain the excess water set aside.
👉Now heat a kadai add ghee+oil,next add chopped onions fry well,then add the curd mixture to it ,add salt,cook well till raw smell goes.
👉Next add the cooked vegetables mix well and allow the mixture to thicken.
👉Now finally add the cooked seeraga samba rice mix everything together check for salt.
👉Serve hot with chips n onion raitha.

Note

✍️Use the excess water from cooked vegetables as clear soup or add it to rasam.
