Cauliflower and Peas Pepper Fry: A Quick and Flavorful Stir-Fry

Cauliflower and Peas Pepper Fry is a simple yet delicious South Indian-style stir-fry (poriyal) that’s packed with flavor and nutrition. This dish is made by combining cauliflower florets and green peas with freshly ground pepper and aromatic spices. It’s a versatile recipe that pairs beautifully with rice, chapati, or even as a side dish for a festive spread.

In this recipe, the cauliflower and peas are partially cooked in a pressure cooker to save time and retain their natural taste and texture. However, if you prefer, you can cook them directly in a kadai (pan) along with the tempering spices. This pepper fry is not only quick and easy to make but also offers a wholesome and mildly spiced dish that the entire family can enjoy.

Tips for Making Cauliflower and Peas Pepper Fry

1. Cooking Method: Pressure cooking is a time-saver, but ensure you don’t overcook the vegetables. One whistle is sufficient to keep them firm and non-mushy.
2. Cleaning Cauliflower: Always soak cauliflower florets in salted hot water for a few minutes to remove any impurities or hidden worms.
3. Freshly Ground Pepper: For the best flavor, use freshly ground black pepper instead of pre-packaged powders.
4. Spice Level: Adjust the quantity of pepper according to your spice preference.
5. Additions: You can enhance the dish by adding a handful of grated coconut or finely chopped coriander leaves for a fresh finish.
