Potato Roast | Urulaikilangu Varuval
Potato roast or urulaikilangu varuval is an absolutely delicious and very traditional South Indian fry variety. Usually, potato varuval / fry is made by
chopping the potatoes to cubes but in this variety, we cut the potatoes into slightly thick circular shapes then pressure cook them along with all the other ingredients, and later transfer the cooked potatoes along with the water to a pan and allow the water to evaporate completely and slowly roast them. Believe me, it will taste absolutely divine . This is my family's traditional heirloom recipe. Check out the recipe below.Ingredients
Potatoes- 4 nos cut to slightly thicker circular shapesOnions-2 nos chopped
Garlic -4-6 cloves chopped
Ginger-1/2 inch piece chopped
Chilly powder-1 1/2 tsp
Mustard seeds-1 tsp
Curry leaves
Coriander leaves
Salt to taste
Oil-1 tbsp
Method
👉Wash and cut the potatoes along with the skin into slightly thick round pieces.👉Now in a pressure pan add the potatoes, onions, garlic, ginger, chilly powder, and salt and add enough water to cover the potatoes. Cook it for 1 whistle remove it from the fire and set it aside.
👉Heat a pan or tawa add oil, mustard seeds, and curry leaves and allow it to splutter then pour the cooked potatoes along with the remaining water and allow it to cook until all the water evaporates and the mixture thickens then roast them well until crispy for few minutes. Garnish and serve hot.
