Potato Roast (Urulaikilangu Varuval): A Traditional South Indian Delight

Potato Roast, or Urulaikilangu Varuval, is a classic South Indian fry that holds a special place in every household. This version of potato fry is a traditional heirloom recipe from my family, offering a unique twist to the usual cubed potato roast. Here, the potatoes are sliced into slightly thick circular pieces, pressure-cooked with spices, and then roasted to perfection in a pan. This two ways of cooking add in depth of flavours and create a crisp texture. The spices infuse deeply into the potatoes during the cooking process, making every bite a delightful explosion of flavor.

Tips for Making Perfect Potato Roast

1. Cut Uniform Slices: Ensure the potato slices are of equal thickness to cook evenly.
2. Pressure Cooking: Be careful not to overcook in the pressure cooker. One whistle is enough to make them tender yet firm.
3. Use Non-Stick or Cast Iron Pan: For the perfect crispy roast, use a non-stick or cast iron pan and cook on medium heat.
4. Avoid Overcrowding: Roast the potato slices in batches if necessary to ensure they crisp up nicely.
5. Patience is Key: Allow the water to evaporate completely before roasting the potatoes, and toss them gently to avoid breaking.
6. Customize Spice Level: Adjust the quantity of red chili powder or pepper based on your spice preference.
