For Paste
Mint leaves-handful
Ginger -1 inch piece
Green Chilli-1 no
Cumin seeds-1/2 tsp
Other Ingredients
Raw Rice-1 cup
Moong dal-1/2 cup
Green Chilies -1-2 nos
Ginger -1 inch piece
Cumin seeds -1 tsp
Pepper-3/4 tsp
Turmeric powder -1/4 tsp
Salt to taste
Asafoetida -1/4 tsp
Cashews-few
Ghee-2 tbsps

Method
✍️Grind all the ingredients listed under “For paste” into a smooth paste and keep aside.
✍️Wash the rice and dal thoroughly and set aside.Soak for 15 minutes if desired.
✍️Heat ghee in a pressure cooker. Add cumin seeds, pepper, ginger, green chilies, curry leaves, and asafoetida. Sauté until aromatic.
✍️Add the prepared mint paste and sauté for a few seconds.
✍️Add turmeric powder and the required amount of salt. Mix well.
✍️Add the washed rice and dal, and sauté for a few seconds until well combined.
✍️Pour in 4–5 cups of water and mix well. Pressure cook for 5 whistles. Switch off the flame and allow the pressure to release naturally.
✍️Open the cooker and mash the pongal well.
✍️Switch the flame back on, add extra water if the pongal is too thick, adjust salt if needed, and allow it to boil until it reaches the desired consistency.
✍️In a separate pan, fry a few cashews in ghee and add them to the mint pongal. Mix well and switch off the flame.
✍️Serve hot with coconut chutney or tomato chutney. Enjoy 😋
