Ingredients
Flaxseeds-1/2 cup
Bengal Gram dal -2 tbsps
Urad dal-2 tbsps
Black/white sesame seeds-1 tbsp
Pepper -1 tsp
Cumin seeds -1 tsp
Coriander seeds-1-2 tbsps
Red chillies -6 nos
Garlic -6 nos
Curry leaves-handful
Tamarind-a small piece
Asafoetida -1/4 tsp
Salt-to taste

Method
✍️Dry-roast the flaxseeds and sesame seeds over medium heat until they start popping, change color, and release a nutty aroma. Transfer to a plate and let cool.
✍️In the same pan, dry-roast the Bengal gram dal and urad dal until light golden brown. Add cumin seeds, dried red chilies, and pepper; roast for a few seconds until fragrant. Transfer to a plate.
✍️Next, dry-roast the coriander seeds and transfer to the plate.
✍️Finally, dry-roast the garlic, curry leaves, and tamarind. Add asafoetida, roast briefly until aromatic, and transfer to the plate.
✍️Allow all the roasted ingredients to cool completely. Add salt as required and mix well. Grind to a coarse powder. Cool completely and store in an airtight container.
✍️Serve with steamed rice drizzled with ghee, or enjoy with idli, dosa, and other breakfast dishes.
