Kurkuri Bhindi or Crispy Okra -A popular Indian snack
Kurkuri Bhindi, also known as crispy okra, is a popular Indian snack and side dish loved for its crunchy texture and bold flavors. Ingredients
Ladies finger -250 gms
Besan flour-1/2 cup
Rice flour -1/4 cup
Turmeric powder -1/4 tsp
Red chilli powder-1/2-3/4 tsp
Kashmiri chilli powder -1/4 tsp
Coriander powder-1 &1/2 tsp
Roasted cumin powder -1/2 tsp
Chaat masala -3/4-1 tsp
Salt -3/4 tsp
Oil -for deep frying

Method
👉Wash and wipe the ladies finger well without any moisture.Cut into thin strips lengthwise and remove the seeds.
👉In a mixing bowl add the cut okra, besan flour, rice flour, turmeric powder, red chilli powder, Kashmiri chilli powder, coriander powder, roasted cumin powder, chaat masala and required salt mix well.
👉Now add a tablespoon or two of hot oil and mix well so that the masala coats uniformly on all sides of the bhindi.(Don’t add water as this will make the bhindi soggy after frying and it won’t stay crispy for long time).
👉Set aside for 10 minutes to rest (this process releases moisture from the ladies finger making it to stick to the masalas).
👉Heat oil in a wide pan and once the oil is hot keep the flame in medium throughout.
👉Now drop the okras gently into the hot oil and do not disturb for a minute.
👉Gently flip the ladies finger to make sure it’s evenly cooked.
👉Fry until the ladies finger turns golden brown and crisp.
👉Remove from oil and transfer to a tissue paper to remove excess oil.Garnish with chaat masala and red chilli powder.
