Aval laddu | Poha ladoo | Atukula laddu recipe
Aval Laddu, also known as Poha Ladoo or Flattened Rice Balls, is a popular Indian sweet delicacy made from flattened rice, sugar or jaggery, ghee, nuts and raisins. It is cherished for its delightful taste and cultural significance.
This traditional Aval laddu holds a special place in Indian cuisine, particularly during festivals and auspicious occasions like Krishna Janmashtami . It is often prepared as an offering to deities during religious ceremonies and is served to guests during weddings and festivals. Aval Laddu symbolizes joy, abundance, and is believed to bring good luck and prosperity.
Traditionally Aval laddu or Poha ladoo is made with jaggery but here I have used powdered sugar and moreover I have not added coconut or fried gram dal powder you can add it if you like.
To prepare Aval Laddu, dry roast flattened rice in medium heat until it becomes light golden brown colour making sure not to burn it . Grind to fine powder and transfer to a mixing bowl. Next powder the sugar along with cardamom and add it to the mixing bowl.In a pan, melt ghee and add chopped cashews and raisins and sauté and mix it with the other ingredients in the bowl.
Now add warm ghee little by little and shape the mixture into small round balls and allow them to cool and firm up.
There are variations and additions to Aval Laddu, such as adding jaggery instead of sugar ,fresh coconut , fried gram dal powder (pottukadalai maavu) etc..

Ingredients
Aval/Poha/flattened rice-1 cup heaped
Powdered Sugar-1/2 cup or according to taste
Cardamom-2- 3 nos
Cashew and raisins few
Ghee-4 tbsp or as required

Method
👉Dry roast the aval in medium flame until light golden brown colour.Grind to fine powder and transfer to mixing bowl.
👉Next grind sugar and cardamom to a fine powder.Transfer it to mixing bowl along with powdered Aval.Add sugar according to your taste preference.
👉Roast the cashews and raisins in ghee and add it to the powder.
👉Add slightly warm ghee little by little and shape to small round balls or laddus.Add only required amount of ghee.Moreover if the ghee is too hot it will dissolve the sugar and the mixture will become watery and difficult to shape the laddus .
👉Allow the ladoos to firm up and cool down completely and then store in airtight container.
