Hotel Style Tomato Onion Chutney
The hotel style tomato onion chutney also known as Kara chutney is a flavourful healthy chutney or condiment variety made with onions and ripe tomatoes along with spices.This chutney is a perfect accompaniment to various Indian dishes, such as idli, dosa, Pongal,vada, chapati etc. as it adds a tangy and spicy flavor that complements the main dish.

Ingredients -
Tomato -2 nos chopped
Onion -2 nos chopped
Garlic -4-6 nos (along with skin )
Ginger -1 inch piece chopped
Red chillies -6 nos
Bengal gram dal -1 Tsp
Urad dal-1 Tsp
Mustard seeds -1/2 Tsp
Turmeric powder -1/8-1/4 Tsp
Asafoetida -1/8 Tsp
Tamarind - small gooseberry sized
Salt to taste
Sugar-1/8-1/4 Tsp
Curry leaves -few
Oil -2-3 Tsps

Method
👉Heat 2 Tsps of oil in a pan add Bengal gram dal and sauté for few seconds then add red chillies, curry leaves, garlic, ginger, onions, sauté well until its light golden brown colour ,now add tomatoes,tamarind, turmeric powder, required salt and little sugar and sauté well until they are well cooked and mushy.
👉Transfer to a mixie jar and allow it to cool.
👉Grind to fine paste without adding water.
👉Now again heat a Tsp of oil in the same pan add mustard seeds, urad dal, curry leaves, asafoetida and allow it to splutter to this add the ground paste and little water and allow the mixture to boil until it thickens to desired consistency.
