Ingredients
Ragi flour-2 cups
Salt-1 Tsp
Hot Water -2 cups + 2 Tbsps or as required
Oil-1-2 Tsps

Method
👉In a mixing bowl add ragi flour, salt, oil and mix well.
👉Now add boiling water little by little and mix to form a dough .
👉Keep covered with a moist cloth for few minutes until the dough is cool enough to handle.(it should be slightly warm and not completely cooled).
👉Meanwhile boil required water in a steamer, smear oil in Idiyappam plates or idli plates and also smear oil in the Idiyappam presser and mould keep everything ready.
👉Now take a big ball size of the dough roll it into cylindrical shape, fill it inside the Idiyappam presser and press Idiyappam on to the oil smeared Idiyappam plates or idli plates.
👉Repeat the process with rest of the dough.
👉Serve the ragi Idiyappam with coconut milk mixed with jaggery and cardamom powder or with vegetable Kurma or tomato thokku, vathakulambu etc..
