Sambharam | Spiced Buttermilk | Kerala style Buttermilk | Neer Moru
Sambharam or Morum vellam is a refreshing traditional Kerala style spiced buttermilk recipe. The difference between regular buttermilk and sambharam is the addition of coarsely pound shallots, ginger and green chillies to the buttermilk which makes it more spicier and refreshing. This sambharam or spiced neer moru is traditionally served during Onam sadya . This morum vellam (buttermilk in Malayalam ) is a healthy cooler drink to have during this summer. You can refrigerate the buttermilk before serving or add cold water or ice cubes while whisking the curd either way make sure you serve it chilled for extra flavour. Ingredients
Curd -1 cup
Water-2 cups or as required
Shallots -8-10 nos
Green chillies -1 no
Ginger-1 inch piece
Curry leaves few
Coriander leaves few
Asafoetida-1/4 Tsp
Salt -1/2 Tsp or as required

Method
👉In a bowl add the curd whip well then pour water and dilute it to desired consistency add required salt and asafoetida mix well.
👉In a motor pestle add ginger, green chillies, shallots and pound coarsely.
👉Add this mixture to the buttermilk mix well check for salt.Add curry leaves, coriander leaves and mix well.
👉Serve.
