Sambharam

Sambharam, also known as Morum Vellam or Spiced Buttermilk, is a refreshing and traditional Kerala-style drink that is perfect for hot summer days. This flavorful beverage is a staple in Kerala households and is often served during Onam Sadya, the grand Kerala feast, as a cooling and digestive drink. While regular buttermilk is enjoyed across India, Sambharam stands out with its unique addition of coarsely pounded shallots, ginger, and green chilies, giving it a spicy, aromatic, and invigorating twist.

This spiced buttermilk, also known as Neer Moru in Tamil Nadu, is not just a delicious thirst quencher but also a highly beneficial drink. It aids digestion, keeps the body cool, and provides relief from the summer heat. The probiotics in curd (yogurt) help maintain gut health, while the ginger and green chilies boost metabolism and add a refreshing zing. The shallots enhance the flavor while contributing to the drink’s nutritional value.

To prepare Sambharam, curd is whisked until smooth and diluted with water to achieve the desired consistency. Coarsely crushed shallots, ginger, and green chilies are then added, along with curry leaves and salt. The drink can be further enhanced by adding a pinch of asafoetida or a squeeze of lime juice for added flavor. For the best taste, it is served chilled—either by refrigerating the prepared Sambharam or by adding cold water or ice cubes during preparation.

Sambharam is a versatile drink that can be served as a part of a festive meal or enjoyed as a refreshing beverage anytime. Its simple preparation, combined with its health benefits and irresistible flavor, makes it a must-try traditional recipe. Whether you’re celebrating Onam or looking for a healthy summer cooler, Sambharam is sure to become a favorite.
