Shrikhand | Kesar Pista Shrikhand | Easy Homemade Shrikhand
Ingredients
Thick curd -500 gms or 2 cups
Powdered sugar-2-3 Tbsps or as per taste
Cardamom powder-1/2 Tsp
Saffron soaked milk-2-3 Tsps
Chopped pista-1 Tbsp
Chopped badam-1 Tbsp
Saffron few

Method
To make hung curd-
👉Keep a bowl and place a strainer on top and spread a clean muslin cloth on top of the strainer.
👉Pour thick curd on to the cloth and cover all four ends and make a potli and gently squeeze the curd to separate the whey water.
👉 Keep this potli arrangement as it is in the fridge for 3-4 hours or until all the whey has drained from the curd or (you hang it below a tap in a sink).You will get a thick curd without any whey this is called chakka or hung curd.
👉Hung curd is now ready to use .
For making shrikhand
👉In a mixing bowl add the hung curd, powdered sugar cardamom powder, saffron soaked milk and chopped pista badam mix well, then whip well until you get nice buttery smooth consistency.
👉Garnish with extra pista badam and few saffron strings and serve chilled.
👉Enjoy.
Preparation Time- 3 hours for making hung curd &10 mins for mixing

Other variations -
😋Mango shrikhand (Amrakhand)- just add mango pulp while mixing ,adjust sugar accordingly .
😋Gulkund shrikand - add gulkund ,adjust sugar accordingly
😋Mixed fruit shrikhand- add 1/2 cup of mixed fruit of your choice to hung curd adjust sugar accordingly.
😋Chocolate shrikhand - Melt dark chocolate (1/2 cup )add it to hung curd along with fresh cream(1/2 cup) adjust sugar accordingly.
