Seppankizhangu Roast | Colocasia Fry | Arbi Fry | Taro root Roast
A very simple yet delicious South Indian style varuval or roast variety made with Seppankizhangu ( Colocasia/ Arbi / taro root). This colocasia fry is a

Colocasia / (seppangkilangu )-1/2 kg
Red chilli powder-1 1/2 Tsp
Turmeric powder-1/2 Tsp
Pepper powder-1/2 Tsp
Rice flour-1 Tbsp
Salt to taste
Mustard seeds-1/2 Tsp
Fennel seeds-1 Tsp
Asafoetida-1/8 Tsp
Curry leaves and coriander leaves few
Oil -2 Tbsps

Method
👉Wash the colocasia (Seppankizhangu)well 3-4 times to remove dirt. Place the colocasia in a pressure cooker add water just enough to cover it . Pressure cook for 1 whistle and switch off the gas and allow the pressure to subside completely. Drain the water and peel the colocasia then cut to medium sized pieces.
👉Heat oil in a kadai add mustard seeds fennel seeds and curry leaves and allow it to splutter.
👉Keep the flame in medium then add turmeric powder, red chilli powder , pepper powder, salt , asafoetida and mix well and sauté for few seconds.
👉Now add the colocasia (Arbi)and mix well. Roast in medium flame until crispy add oil in between if needed.
👉Add rice flour and roast for 2 mins .
👉Garnish with coriander leaves and switch off the gas. Serve hot.
