Capsicum Onion Masala | Capsicum Curry
Ingredients
Capsicum-2 nos
Onion -1 no (chopped into petals refer pic in method)
Tomato-1 no
Green Chillies-2 nos slit length wise
Ginger garlic paste-1 Tsp
Red chilli powder-1/2 Tsp
Turmeric powder-1/2 Tsp
Kashmiri chilli powder-1 Tsp
Coriander powder-2 Tsps
Cumin powder-1/2 Tsp
Garam masala powder-1/2 Tsp
Salt to taste
Kasuri Methi -1 Tsp
Curd -1/4 cup
Coriander leaves few
Oil -2 -3 Tbsps
Sugar -1/2 Tsp optional
Paste 1 -
Onion -2 nos
Green chillies-2 nos
Cinnamon-1 -2 nos
Cloves -2-3 nos
Cardamom-2 nos

Method
👉Grind Paste 1 and Paste 2 separately and set aside.
👉Chop all the veggies into petal shapes see pic below.
👉Heat 1 Tbsp oil in a kadai add onion petals and sauté for 2 mins .
👉Next add capsicum and sauté until half done now add tomato and sauté for 2 mins . Make sure that all the veggies remain crunchy then remove to a plate set aside.
👉In the same kadai heat 2 Tbsps of oil and add jeera allow it to splutter. Next add green chillies and ginger garlic paste and sauté in medium flame for a minute.
👉Add the onion paste (paste 1 ) and sauté in medium flame for 1 or 2 mins.
👉Next add the tomato purée (paste 2 )and cook covered for 2-4 mins until oil oozes on top .
👉Now add red chilli powder, turmeric powder,coriander powder,Kashmiri chilli powder, cumin powder and mix well. Cook covered for another 2-4 mins until raw smell goes.
👉Add slightly whipped curd and keep stirring continuously (to prevent splitting of the curd )for 2 mins.
👉Add 1 cup water and required salt mix well and again cook covered for 5 mins .
👉Finally add the sautéed veggies to the gravy and mix everything gently and allow the gravy to boil for 5 mins.
👉Add garam masala powder and kasuri methi and coriander leaves mix well.
👉Cook covered for a minute in high flame.
👉Add in 1/2 Tsp sugar and garnish with coriander leaves.
👉Switch off the gas and serve hot.
