Sukku Rasam / Dried Ginger Rasam


Sukku Rasam, also known as Dried Ginger Rasam, is a traditional South Indian rasam that is both delicious and packed with health benefits.  Ingredients 

For Masala-

Peppercorns-1 Tsp

Cumin seeds-1 Tsp

Coriander seeds-1 1/4 Tsp

Garlic -5 -6 nos 

Dry ginger(sukku)- 1 1/2 inch piece

Green chilli-1 no

Red chillies-2 nos 


Other Ingredients 

Tamarind extract-1/2 cup

Tomato-1 no finely chopped 

Turmeric powder-1/2 Tsp

Salt to taste

Mustard seeds-1/2 Tsp

Red chilli-1 no 

Jaggery-1/2 Tsp

Ghee-1 Tsp

Curry leaves and coriander leaves- few

Method 

👉Powder the ingredients given under masala coarsely set aside.




👉In a vessel add the tamarind extract, turmeric powder, salt, tomato, 1 1/2 -2 cups of water and mix everything well and set aside. 



👉Heat ghee in a kadai add mustard seeds, red chilli asafoetida and curry leaves and allow it to splutter. 


👉Now add the coarsely ground powder and sauté in medium flame for few seconds. 




👉Next pour the tamarind mixture mix everything well and check for salt. 





👉Allow the rasam to come to a boil and add coriander leaves and jaggery mix well and switch off the gas.





 



👉Serve hot with rice or drink as soup.
