Vendakkai Poriyal or ladies finger fry is a delicious traditional South Indian style stir fry variety made with okra.This is a simple recipe and can be prepared quickly.This vendakkai poriyal goes very well with sambar,rasam,curd rice etc..

The process of preparing this okra fry is pretty simple.Firstly make sure to wash and wipe dry the okra well using a kitchen towel and then chop it (this is the most important step). Ingredients

Ladies finger/vendakkai-1/2 kg chopped

Onion-1 no chopped

Red chilli powder-1 tsp 

Turmeric powder-1/4 tsp 

Pepper powder-1/8 tsp 

Mustard seeds-1/2 tsp 

Urad dal-1 tsp 

Cumin seeds-1/4 tsp

Red chilli-1 no 

Rice flour-1 Tbsp

Curry leaves and coriander leaves few 

Grated coconut-1 Tbsp 

Salt to taste 

Oil -2 Tbsps

Method 

👉Wash the ladiesfinger and wipe well to remove all the moisture using a kitchen towel . Cut to small pieces set aside.


👉Heat oil in a kadai add mustard seeds, urad dal, cumin seeds,red chillies, curry leaves and allow it to splutter.


👉Add onions and saute well until the onions turn translucent.



👉Add ladiesfinger and sauté well in medium flame for 2 mins .


👉Now sprinkle very little water (just a tablespoon) and continue to sauté for few minutes.


👉Once the ladiesfinger is half cooked add red chilli powder, turmeric powder,pepper powder and salt mix well and saute well for another 5 mins until the ladiesfinger is done and raw smell goes.



👉Now add rice flour and mix well and roast for 2 mins.



👉Add coriander leaves and grated coconut and switch off the gas.




👉Serve hot.

Tips- 

✍️Wash and wipe the ladiesfinger without any moisture with kitchen towel and set aside as such for 5 mins and later cut to desired shapes.

✍️Sprinkle very little water to cook the ladies finger.

✍️Don't cover and cook.

✍️Saute in medium flame.

✍️Add the spice powders only after the okra is half cooked.

✍️You can add a tsp of curd to prevent sliminess.
